SMOKY BBQ CRICKET BURRITO BOWL


This is a wonderfully healthy and delicious bowl of goodness. Perfect for an easy weekday dinner or even a packed lunch to take into work!

Time: 30 mins


INGREDIENTS


Black Beans – 400g tin

Sweet Corn – 160g tin

Lime – 1

Red Chilli – 1

Red Onion – 1

Red Pepper – 1

Coriander – small bunch

Whole Grain Rice – 210g uncooked

Mayonnaise – 2 tbsp

Chipotle Paste – 1 tsp

Avocado – 1

Cider Vinegar

Salt and Pepper



METHOD


1. PICKLE THE ONIONS | 20 mins

  • Thinly slice half a red onion.

  • Cover with cider vinegar and leave to pickle for 20 mins.


2. COOK THE RICE | 13 mins

  • Add the rice to a pan and cover with 300ml water

  • Place on a medium high heat until the water bubbles

  • Turn the heat down to low, cover and leave for 13 minutes.


3. MAKE THE SWEETCORN SALSA |5 mins

  • Mix the sweetcorn with a finely chopped red chilli, ½ a red onion, lime zest and juice and 1 tablespoon of chopped coriander.


4. MAKE THE CHIPOTLE MAYO | 1 min

  • Mix the mayonnaise and chipotle paste together.

  • Set aside for later.


5. SEASON THE BLACK BEANS | 1 min

  • Drain the black beans and season with salt and pepper.


6. PREPARE THE CRICKETS | 5 mins

  • Thinly slice ½ a red onion and a red pepper.

  • Add the crickets and stir fry as per the instruction on the Bug Kit.


7. ASSEMBLE | 5 mins

  • Divide the cooked rice, black beans, corn salsa, crickets, pickled onions, coriander between two bowls.

  • Drizzle over the chipotle mayo.
